JaniSoto 78d2ffeb08 docs: update server specification and config matrix for 1.20.1 survival 
- Sync server mod manifest (59 -> 65) and client mod manifest (49 -> 63)
- Remove obsolete references to FLAN, MCDA, MCDW, and Distant Horizons
- Document active custom configurations for AntiXray and Create Addition
- Filter out unchanged default mod configurations verified via container diff
- Update relative docker-compose file location and RCON port mapping in README
